- Graham cracker crust
- 1 (14 oz) can sweetened condensed milk
- 4 egg yolks
- 1/2 cup lime juice
- 4 tsp lime zest
- whipped topping
Preparation
Step 1
1. Preheat oven to 325 degrees.
2. In a medium bowl, whisk the lime zest and egg yolks together for about one to two minutes to achieve a light green hue. Next, beat in the condensed milk and then add in the juice and mix again. Allow this key lime mixture to stand at room temperature until thickened.
3. Once the key lime mixture has sufficiently thickened, pour into the graham cracker crust and bake in the oven for about 15 minutes. When the center of the key lime mixture sets but still is wiggly, you can remove the pie from the oven and allow cooling to room temperature.
4. Once your pie has achieved room temperature, chill it in the refrigerator for several hours. You can serve your pie topped with whipped cream or serve it plain.
