Cupcakes: Deliciously Plain Vanilla Cupcakes

Ingredients

  • 2 cups all-purpose flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 4 eggs, separated
  • 1 cup 2% milk
  • 1 1/2 tsp. vanilla

Preparation

Step 1

Preheat oven to 350°. Line pan with cupcake liners.


Combine flour, baking powder, and salt. Set aside.


Combine butter, 1 cup sugar, egg yolks, milk and vanilla.


Add dry ingredients.


Whip 1/2 cup sugar and egg whilte until fluffy and smooth.


Fold egg whites into batter.


Fill liners 1/2 full (do not overfill!)


Bake 20 minutes.


Let cool and frost with Deliciously Plain Buttercream Frosting.


Deliciously Plain Buttercream Frosting:
1/2 cup butter, softened
4 cups powdered sugar
1/8-1/4 tsp. salt
4-5 Tbls. milk
2 tsp. vanilla


Cream butter until very fluffy. Add part sugar and salt and beat again. Continue adding sugar and milk in small batches, alternately, beating until very fluffy. Stir in vanilla.
