Chicken Caesar Pita

Ingredients

  • 1/2 cup water
  • 1/8 tsp. Dry unflavoured gelatine
  • 1/3 cup white vinegar
  • 1/2 cup olive oil
  • 1/2 tsp. Finely minced red bell pepper
  • Salt and pepper
  • 1/4 tsp. Garlic powder
  • 1/4 tsp. Worcestershire sauce
  • Dash each parsley, oregano, thyme, basil
  • 2 tbs. Grated cheese
  • 2 tbs. egg substitute
  • 2 boneless, skinless chicken breasts
  • 6 cups lettuce, chipped
  • 1/4 cup red cabbage, shredded
  • 4 pita breads
  • 4 tsp. Shredded cheese

Preparation

Step 1

Dissolve gelatine in water, place on high heat for 2 minutes, until the mix begins to boil rapidly. Add the vinegar, whisk while adding the oil. Add the bell peppers, sauce, and spices. Cook 15 minutes, add the egg substitute and then the grated cheese. Whisk until slightly thicker, then chill overnight.
Season chicken and grill until done. Dice the chicken. Combine the lettuce and cabbage and toss well.
Heat the pita for 20 seconds, fold in ½ and then add 1 ½ cups of the salt, 1/3 cup of the diced chicken and then top with 1 tbs. of dressing. Sprinkle some cheese over top and then serve.
