Ingredients

  • 1 lb dry red kidney beans
  • 1 meaty ham bone or hock
  • 1 chopped onion
  • 1 green bell pepper
  • 2 ribs of celery
  • 2 cloves of garlic
  • salt and pepper to taste
  • 1 bay leaf
  • pinch of sugar
  • 2 lbs sausage
  • 1/4 c parsley, chopped
  • Rice

Preparation

Step 1

Soak beans overnight. Drain and rinse. Cover with water and cook in crock pot with ham hock, onion, bell pepper, celery, garlic, salt and pepper, sugar and bay leaf. Cook sausage, add to beans, remove the bay leaf. Add parsley.
Serve over rice.
