Ingredients
- 1/2 a red onion
- 2 T. olive oil
- 3 cloves of minced garlic
- 1 yellow squash, cut into half circles
- 1 zucchini, cut into half circles
- 1 bunch of asparagas, cut into pieces
- 2 cups cherry tomatoes, cut in half
- 2 cups fresh spinach
- (add different or additional veggies as desired)
- salt and pepper to taste
- 1 T. cinnamon
- 1 T. Veggie Bombay (or All Spice)
Preparation
Step 1
Saute onion in olive oil until it begins to get translucent. Add minced garlic and saute for another minute. Add yellow squash, zucchini, and asparagas (or other favorite veggies). Add salt and pepper to taste, 1 T. cinnamon, and 1 T. Veggie Bombay (or All Spice). Saute for about 15 minutes or until veggies start to soften. Add cherry tomatoes and spinach. Cover with a lid and allow to cook about 5 more minutes. Stir to mix.
