Ingredients
- 16-20 ounces whole wheat pizza dough (I used my favorite recipe)
- 1/4 cup natural peanut butter
- 3 tablespoons water
- 2 teaspoons soy sauce
- 2 teaspoons rice vinegar
- 2 teaspoons minced fresh ginger
- 1 garlic clove, minced
- 1 teaspoon canola oil
- 8 ounces boneless/skinless chicken breast, diced
- 1 cup diced red bell pepper
- 4 green onions, thinly sliced
- 4 ounces shredded part-skim mozzarella cheese
Preparation
Step 1
Preheat oven to 450 with the rack placed on the lowest position.
Stretch dough on a lightly floured surface into a rough 16" oval. Carefully move dough over to a baking sheet lightly coated with nonstick spray. Place in the oven and bake until lightly crisped on the bottom, about 8 to 10 minutes.
In a small bowl, whisk together peanut butter, water, soy sauce, vinegar, ginger and garlic.
In a medium skillet, heat oil over medium-high. Season chicken lightly with salt and fresh ground pepper to taste - add chicken and cook, stirring, until cooked through, about 3 to 4 minutes. Scoop mixture into a medium bowl and toss together with the bell pepper, scallions and 1 tablespoon of the peanut sauce.
Remove the crust from the oven and evenly spread the remaining peanut sauce over the top. Scatter with the chicken mixture and then sprinkle with cheese. Place the pizza back in the oven and continue to bake until the cheese is melted and the crust has fully baked - about 8-14 minutes.
Makes 4-6 servings.
