Ingredients
- 2 cups pastry flour
- 1 ½ tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. salt
- 1 ½ cups sugar
- ½ cup shortening
- ¼ cup buttermilk
- 1 cup mashed ripe bananas
- 2 eggs
- 1 tsp. vanilla
- ¼ cup buttermilk
- 1/3 cup butter
- ¾ cup packed brown sugar
- 3 tbs. light cream
- 1 cup coconut, flaked
- ¾ cup chopped nuts
Preparation
Step 1
Combine the flour, baking powder, baking soda, and salt. Add the sugar, shortening, ¼ cup buttermilk, and bananas on medium speed for 2 minutes. Add eggs and ¼ cup buttermilk. Beat on medium speed for 1 minute. Spread batter evenly in a 13 x 9 inch pan.
While the cake is baking, melt the butter and stir in the remaining ingredients. Remove the cake from the oven and spread on the topping mix. Broil 2 – 3 minutes, until bubbly and golden.
