Ingredients

  • 2 Qts. Water
  • 1 Ham Hock
  • 1 tsp. Salt
  • 1/4 tsp. Pepper
  • 1 Can Whole Tomatoes (16 Oz.), undrained and coarsely chopped
  • 1 Large Onion, chopped
  • 1 Clove Garlic, minced
  • 1/4 Cup Lemon Juice

Preparation

Step 1

Wash beans, place in a Dutch Oven, cover with water 2 inches above beans, and soak overnight. Drain beans; add 2 quarts of water, ham, salt & pepper. Cover and bring to a boil; reduce heat, and simmer 1 1/2 hours or until beans are tender. Add remaining ingredients; simmer 30 minutes, stirring occasionally. Remove meat from ham bone and return meat to soup.
