Ingredients
- 2 cups (2 small zucchini), grated
- 1/2 cup vegetable oil
- 1 1/2 cups sugar
- 2 teaspoons vanilla extract
- 2 cups flour
- 1/2 cocoa powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt.
Preparation
Step 1
Grate 2 small zucchini for a total of 2 cups.
Mix in a large bowl: 1/2 cup vegetable oil, 1 1/2 cups sugar, 2 teaspoons vanilla extract.
In a smaller bowl: 2 cups flour, 1/2 cocoa powder, 1 1/2 teaspoons baking soda, 1 teaspoon salt.
Combine the dry ingredients with the sugar mixture, then add the zucchini. The mixture is really, really dry. Pat it into a 9 x 13-inch pan coated with cooking spray and bake at 350 degrees for 30 minutes.
The zucchini releases moisture during baking and the resulting brownies are actually very moist. Let them cool before cutting.
