LAYERED ATHENIAN CHEESE SPREAD
- 1 pkg. (8 oz) feta , chopped
- 1 jar (7 oz) sweet roasted peppers, drained and chopped (divided)
- ½ cup almonds, sliced (divided)
- 2 pkgs. Cream cheese
- 1 clove garlic (minced)
- 1 pkg (10 oz.) frozen chopped spinach (thawed and drained)
Mix feta, ½ peppers, cream cheese, ½ almonds and garlic together. Stir in spinach. Divide in half.
Coat bowl with plastic wrap. Put remaining almonds in bowl. Add ½ of cream cheese mixture. Spread remaining peppers over. Add rest of cream cheese mixture. Cover and chill 4 hours or overnight.
Unmold on plate. Serve with wheat thins.
