  • Russett potatoes
  • 1 tsp. baking soda
  • 2 tbsp. butter
  • 2 onions
  • 1 sprig of chives
  • 2 tbsp. olive oil
  • Salt and Pepper

Preparation

Step 1

Pre-heat the oven to 500 degrees. Take a baking pan and spread olive oil on the bottom and heat in the oven.

Peel the potatoes and cube into 3/4" cubes. Bring water to a boil in a deep pot. Add 1 tsp. baking soda. Add the potatoes and cook for 1 minute.

Drain the water. Return the potatoes back to the pot to dry the potatoes. Add 2 tbsp. butter and cook for 2 minutes.

Take the baking pan out of the oven. Add the potatoes onto the baking pan and bake for 15 minutes.

Peel and cube onions in 1/2" cubes. Add olive oil over the onions and sprinkle with salt and pepper.

Add onions to the middle of the baking pan - push the potatoes around it (after flipping potatoes over). Bake for another 15 minutes.

Mix the potatoes and onions again. Bake for another 5 minutes until golden brown.

Chop chives finely and add to potatoes at the end.
