Put eggs in one layer in saucepan. Fill pan with water to one inch above eggs. Heat on medium-high heat until boiling.

Remove from heat, cover pan and set timer for 15 minutes for large eggs or 18 minutes for extra-large eggs.

Put pan in sink and run cold water into pan until the eggs are cool.

Gently tap a cooled egg on counter top until it has cracks in it. Roll the egg between your hands until the cracks turn into small crackles all over the egg.

Use fingers to start peeling off the shell at the large end of the egg.
