Ingredients
- 1 can black-eyed peas, drained
- 1 can seasoned or plain black beans, drained
- 1 + cup frozen sweet corn, thawed
- 5 green onions, chopped
- Green bell pepper, chopped
- Orange (or yellow or red) bell pepper, chopped
- 4 or 5 tomatoes, diced
- 2 jalapenos
- DRESSING
- 2 garlic cloves
- 1 tablespoon olive oil
- 1 tablespoon white wine vinegar
- lime, juiced and zest
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste

Preparation
Step 1
Chop fresh produce and combine with drained beans in large bowl.
Mix dressing ingredients, and pour over bean mixture.
Serve with scoop tortilla chips.
Refrigerate until serving.
