Ingredients
- 1/3 cup quinoa
- 3 Tb olive oil
- 2 Tb sherry vinegar or red wine vinegar
- kosher salt and black pepper
- 1/2 lb tomatoes, cut up .... small eighth's/
- 1/2 English cucumber, sliced, skin on
- 4 cups baby arugula ( about 3 ounces)

Step 1
Cook the quinoa according to package directions; let cool.
In a large bowl, whisk together the oil, vinegar, 1/2 tsp salt and 1/4 tsp pepper.
Add the quinoa, tomatoes, cucumber and arugula and toss to combine;
Season with 1/4 tsp each salt and pepper.
