Vegetarian Stew

Ingredients

  • 2 cups millet or coarse ground cornmeal or cracked wheat
  • 6 cups water
  • 1/3 cup oil
  • 1/4 cup tamari sauce
  • 1 tsp kelp
  • 1/2 tsp cayenne pepper
  • 2 cups chopped vegetables (potato, green pepper, onions, celery, carrots, etc)
  • 1/4 cup smoked yeast, optional

Preparation

Step 1

Dry-roast millet in a large skillet or pot. (Cook over medium heat with no oil or water until brown). Add water, oil and seasonings. Bring to a boil, then reduce heat. Cook over low heat, covered, for 10 minutes. Add vegetables. Continue to cook until vegetables reach desired tenderness and millet is soft like rice. Add yeast, if desired, and stir lightly with a fork before serving.
