Ingredients
- 4 salmon fillets (about 1 1/2 lbs.)
- 2 tsp. plus 2 Tbsp. Shedd's Spread Country Crock® Plus Calcium Spread
- 1/4 cup chopped shallots or sweet onion
- 1 cup chicken broth
- 2 Tbsp. orange juice
- 1 to 2 Tbsp. balsamic vinegar
- 1 Tbsp. firmly packed brown sugar
- 1 Tbsp. cornstarch
- 1/2 cup toasted sliced almonds

Step 1
1. Preheat oven to 350°F. In a 13-by-9-inch shallow baking pan, arrange salmon. Season, if desired, with salt and pepper. Spread salmon evenly with 2 tsp. Spread. Bake for 15 minutes or until salmon flakes easily with a fork.
2. Meanwhile, in a small saucepan, melt remaining 2 Tbsp. Spread over medium-high heat. Cook shallots, stirring occasionally, for 2 minutes. Add broth, juice, vinegar, sugar and cornstarch. Bring to a boil. Reduce heat to medium and simmer uncovered, stirring constantly, for 5 minutes or until sauce is slightly thickened. Pour sauce over salmon, sprinkle with almonds.
