Ingredients
- Boneless chicken breasts
- leeks, cut lengthwise, white only
- garlic
- red peppers
- 1 can plum tomatoes, chopped
- 1/2 cup vermouth (sweet or dry)
- oregano
- basil
Preparation
Step 1
Sautee chicken in olive oil. Remove chicken and add leeks, garlic, red peppers, plum tomatoes, vermouth, oregano and basil to the oil. Slice chicken and return to pan. Serve over penne pasta.
