Easy Old World Style Pasta Fagioli

Healthy, delicious and inexpensive. This is not of a thin soup. It is what we Italians consider a "peasant meal." With a crispy loaf of Italian bread this would go very far in a large household.

Ingredients
- * 3 cloves of garlic, diced
- * 1/3 C. olive oil
- * 2 16 oz. cans tomato sauce
- * 1 can tomato paste
- * 1 lb. box ditalini pasta
- * 3 cans cannellini beans
- * 3 leaves fresh basil
- * 1 C. water
- * Grated Parmesan cheese to taste

Step 1
Fry garlic to light golden brown in oil, drain the garlic, saving oil. Place oil, tomato sauce, tomato paste and basil into large pot, stirring over medium flame until paste integrates. Simmer for 1/2 hour. Drain beans thoroughly and add water, then fold into tomato sauce mixture. Cook on medium heat for 30 minutes. Cook pasta according to package directions and drain. Add to beans and stir gently. Serve immediately. Top with grated cheese and enjoy!
