Ingredients

  • 1 1/4 Cups Sugar
  • 1 Stick unsealed butter, chilled
  • Grated peel of 2 lemons plus 1 Tbsp lemon juice
  • 1 large egg
  • 1 1/2 Cups flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt

Step 1

Preheat oven tp 350 degrees. Line 3 large cookie sheets with parchment paper. Using an electric mixer, beat 1 cup sugar , the lemon peel and lemon juice until fluffy. Mix in the egg then the flour, soda and salt.

In a small bowl, add the remaining 1/4 cup of sugar. Roll heaping teaspoons of cough in sugar. Place a few inches apart on cookie sheet. Bake until golden at the edges about 15 minutes.

Transfer to calling racks.
