Ingredients

  • 1 1/4 C 1 1/4 C flour
  • 1 1/4 C 1 1/4 C cornstarch
  • 6 1/2 tsp 6 1/2 tsp baking powder
  • 1/2 tsp 1/2 tsp salt
  • 1/4 tsp 1/4 tsp Cajun seasoning
  • 1 1/2 C 1 1/2 C cold water
  • 1/2 tsp 1/2 tsp oil
  • 1 lbs 1 lbs uncooked large shrimp peeled and deveined
  • 2 1/2 C 2 1/2 C flaked coconut
  • Additional oil for frying
  • 1 C 1 C orange marmalade
  • 1/4 C 1/4 C honey

Step 1

In a bowl conbine the first five ingredients. Stir in water and oil until smooth. Dip shrimp into batter then coat with coconut. In a electric skillet or deep fat fryer heat oil to 375 degrees. Fry shrimp a few at a time for 3 mins or until golden brown. Drain on paper towels. In a saucepan heat marmalade and honey stir until blended. Serve as a dipping sauce.
