Chicken Breasts with Peppers

Ingredients

  • 2 lbs. chicken breasts
  • Salt and pepper
  • 3 tbs. butter
  • ½ tsp. garlic
  • ½ lb. peppers, cut into thin strips
  • ½ cup dry white wine
  • 1 tbs. parsley, chopped

Preparation

Step 1

De-bone the breasts and sprinkle with salt and pepper. Melt 2 tbs. butter and add chicken, skin side down, to skillet. Cook until golden. Add garlic and pepper strips. Cook 4 minutes and add the wine. Cover and cook an additional 4 minutes. Remove chicken, and then add remaining 1 tbs. butter to the peppers. Pour sauce over chicken
