Ingredients

  • 4 boneless, skinless chicken breast halves
  • salt & pepper
  • 6 cloves garlic, minced, about 1 tbsp.
  • 1/4 c. olive oil
  • 1 onion diced
  • 1 can (28 oz.) crushed tomatoes
  • 1/2 c. chopped green olives
  • 2 pickled jalapeno peppers, chopped

Preparation

Step 1

Heat oven to 425 degrees
Put chicken on a plate. Sprinkle both sides with salt and pepper and garlic. Squeeze lime over top, and set aside.
Pour olive oil in a 9x13 baking pan and tip the pan to coat bottom. Add the onion, spreading it across the pan and put it in the oven for 10 mins.
Pick up the chicken pieces and, shaking them gently to remove excess lime juice, lay them in the pan. Return pan to oven for 5 mins.
Combine tomatoes, olives and jalapeno . Pour over chicken and cook 20 mins. or until cooked through. Serve with warm rice, and green salad.
