  • 9 SQUARES OF WHITE BAKING CHOCOLATE, DIVIDED

  • 2 STICKS SOFTENED BUTTER

  • 1 C BROWN SUGAR, FIRMLY PACKED

  • 1/2 C SUGAR

  • 4 EGGS

  • 3 T ORANGE PEEL, GRATED

  • 5 T ORANGE JUICE, DIVIDED

  • 2 C FLOUR

  • 2 tsp BAKING POWDER

  • 1 1/2 C CRANBERRIES (FRESH OR FROZEN)

PREHEAT OVEN TO 350 GREASE AND FLOUR A BUNDT PAN CHOP 6 OF THE CHOCOLATE SQUARES AND SET ASIDE BEAT BUTTER AND SUGARS IN LARGE BOWL WITH ELECTRIC MIXER ON MED SPEED UNTIL LIGHT AND FLUFFY. ADD EGGS, ORANGE PEEL AND 3T OF THE ORANGE JUICE; MIX WELL. ADD FLOUR AND BAKING POWDER AND BEAT UNTIL WELL BLENDED. STIR IN CHOPPED CHOCOLATE AND THE CRANBERRIES. BAKE 1 HOUR AND 10 MINUTES OR UNTIL TOOTHPICK INSERTED NEAR CENTER COMES OUT CLEAN. COOL IN PAN 10 MINUTES, REMOVE TO WIRE RACK. COOL COMPLETELY AND THEN TOP WITH GLAZE. GLAZE: PLACE REMANING 3 CHOCOLATE SQUARES AND REMAINING 2 T ORANGE JUICE IN PAN AND MELT. DRIZZLE OVER CAKE. LET STAND UNTIL GLAZE IS FIRM.
