Ingredients
- 1 cup half-and-half
- 3 lg eggs
- 2 tbsp honey (warmed in a microwave for 20 seconds)
- (OR - use 1 tbsp of sugar instead of honey)
- 1/2 tsp vanilla (use with sugar - not with honey)
- 1/4 tsp salt
- 8 slices substantial white bread (fluffy white does not work well)
- 4 tbsp butter

Preparation
Step 1
Preheat the oven to 375 degree F. In a medium size mixing bowl, whip together the half-and-half, eggs, honey, and salt. (use a good wire whisk or an electric hand mixer.) Pour mixture into 9"x 9"x 2" dish for easy dipping. dip bread into egg mixture, and soak for 30 seconds on each side. Remove slices to a wire rack that is sitting in a sheet pan, and allow to stand for 1 to 2 minutes. (This step is optional, but worth a try.)
Over med-low heat, melt 1 tbsp of butter in a 10-inch non-stick saute pan. Place 2 slices of bread at a time into the pan and cook until golden brown, approximately 2 to 3 minutes per side. Remove from pan and place on rack in oven for 5 minutes. Repeat with all 8 slices.
Serve immediately with lots of real butter and toppings: maple syrup, powdered sugar, whipped cream, jam or fruit.
