Sicilian Steak

Ingredients

  • 4 5 oz pieces beef tenderloin
  • Marinade
  • salad oil to cover meat
  • 1 Tablespoon oregano
  • 1 teaspoon basil
  • 1/2 teaspoon salt and pepper
  • 3 cloves garlic
  • Breading
  • 2 cups plain bread crumbs
  • 1/2 cup flour
  • 1 Tablespoon oregano
  • 1 teaspoon basil
  • 1 Tablespoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup Parmesan cheese

Preparation

Step 1

1. Slightly flatten meat with mallet. Put meat into a bowl, cover with salad oil. Add seasonings and marinate 45 minutes, turning meat periodically.

2. To make breading. Combine all breading ingredients. Remove meat from oil, dip into bread crumb mixture. Place on rack in broiler 5 inches from heat. Steaks must be turned often to avoid burning. When bread crumbs begin to soften meat is about med-rare, about 5 minutes. Cook longer if desired. Serve with pasta, tomato sauce and garlic bread.
