Step 1

Core the tomatoes and cut a cross on the bottom. Blanch in boiling water for 30 seconds. Put in sink and let cool. Peel tomatoes, cut them in half and remove seeds. Some people just squeeze the tomato and the seeds come out. I cut the little connective tissue and use my index finger to push out the seeds. Dice the tomatoes and put them into a bowl. Add: diced onions, chopped capers, garlic, chopped basil, chopped parsley, kosher salt, fresh ground pepper, olive oil. Best made a day ahead of time and served at room temperature.

Get a baguette and slice on the diagonal. Lay them on a cookie sheet and drizzle both sides with just a bit of olice oil. Place under a preheated broiler. Turn and toast both sides.
