Ingredients
- 2 tab. vegetable oil
- 1 med. onion, chopped
- 1 med. green pepper, chopped
- 3 can of red beans, undrained
- 1 can of stewed tomatoes with chilies, undrained
- 1 can of stewed tomatoes, undrained
- 2 lbs. of smoked sausage, sliced
- 2 cups of uncooked rice
Preparation
Step 1
Cook the rice according to package.
In a large saucepan, saute onion and green pepper in 2 tab. of vegetable oil.
Add in all can of beans and tomatoes.
Add sausage.
Bring to a boil and reduce heat to simmer for about 20 minutes. Serve over rice.
