Ingredients
- 4 cups chicken stock
- 4 cups apple juice
- 1/2 cup salt
- 1/2 cup brown sugar
- 1 Tablespoon black peppercorns
- 2 carrots, sliced
- 1 onion, quartered
- 2 celery stalks, sliced
- 8 cups ice water
Preparation
Step 1
Combine first 8 ingredients in large saucepan. Bring mixture to a simmer to dissolve salt and sugar. Cool to room temperature and add ice water. Place turnkey in the brine, breast side up, and cover with coooler lid. Brine overnight, up to 12 hours.
