- 3/4 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 3/4 cups all-purpose flour
- 1 tsp baking soda
- 2 tsp pumpkin pie spice
- 1 tsp salt (optional)
Preparation
Step 1
In a medium bowl, combine the flour and baking soda; Set aside. In a large bowl, beat the sugar, butter, pumpkin pie spice, and vanilla extract until the mixture is creamy. Add the eggs to the creamy mixture and beat for 1 minute. Gradually add the flour mixture to the creamy mixture until it is blended. Chill the dough in a covered bowl for 2 hours. Roll out the dough onto a lightly floured surface to a 1/4” thickness. Using cookie cutters, cut the dough into the desired shapes. Transfer the dough shapes onto a greased cookie sheet. Bake the cookies at 375 degrees Fahrenheit for 8-10 minutes or until the cookies are lightly browned. Transfer the cookies to a cooling rack. Store the cookies at room temperature for up to one week.
