Palacsinta (Hungarian Crepes)

  • 2 cups flour
  • 3 cups milk
  • 5 whole eggs
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon vanilla

Preparation

Step 1

Beat eggs and sugar until fluffy. Add salt, vanilla and 1 1/2 cups milk; beat in flour slowly, until very smooth. Then, add remaining milk (batter will be very thin).

Butter crepe pan and heat to a sizzling point. Pour 1/4 cup batter in the pan and twist pan around until entire bottom is coated with batter. When edges are lightly browned flip and cook for a few seconds more.

**Always rebutter the pan for each new crepe

COTTAGE CHEESE FILLING:

1 lb. dry cottage cheese (small curd)
1/2 cup sugar
1/4 teaspoon salt
2 whole eggs
3 tablespoons sourcream
squeeze of lemon

Beat sugar, eggs, salt and sourcream until smooth. Mix in cottage cheese. Spread generously into center of each crepe and roll up. Place in a greased glass baking dish. Bake at 350 degrees for 35 mintues.
