Ingredients
- 2 TBS grated ginger
- 1/2 cup mayonnaise
- 1 plus TBS fresh lime juice
- 1 TSP finely grated lime peel
- 2 Cups cooker diced chicken
- 1 1/2 lbs. large mangoes
- 1 1/4 kiwis, peeled cut into 1/2 cubes
- 1TBS mint
- 6 Cups romaine lettuce
- 1/4 roasted salted cashews, halved

Step 1
place grated ginger in small strainer set over bowl. Press on solids to extract 4 tsb of ginger juice. discard solids. Stir Mayonnaise, ginger juice, lime juice and lime peel in medium bowl. Add chicken, mango, kiwis, and sliced mint: toss to coat. Season with salt and freshly ground pepper.
Divide lettuce among 4 bowls, mound fruit and scatter chshews, and some fresh kiwi. Garnish with mint sprigs.
