Ranch Potatoes

Ingredients
- 4 large baking potatoes
- 4 oz. cream cheese, softened
- 1/4 cup sour cream
- 1/2 onion, chopped
- 1 cup shredded cheddar cheese
- 3 oz. bacon bits
- 1/4 tsp salt
- 1/2 cup milk, scalded
- 1 1-oz. pkg dry ranch dressing mix
- 4 green onions, green and white parts chopped

Step 1
Wash and pierce potatoes in several places with a fork. Microwave on high 10 minutes until tender. Set aside to cool. Combine cream cheese and sour cream in large bowl; beat until smooth. Add yellow onion, salt, and 1/2 of the cheddar cheese, green onions, and bacon bits. Mix well. Scoop out potatoes from peeling and add to cream cheese mixture, using fork to blend. Stir in milk and dry dressing mix. Spread potato mixture in greased 11x7 baking pan. Bake uncovered at 350 degrees for 30 minutes. Remove from oven and sprinkle with remaining cheddar cheese, green onions, and bacon bits. Bake 5 minutes longer or until cheese melts.
