Ingredients
- 2 slices bacon, chopped
- 2 small onions, chopped
- 2 carrots, chopped
- 2 clove garlic, minced
- 2 teaspoons dried thyme
- 6 medium potatoes
- 2 lbs stewing beef
- 1 cup beef stock
- 1 cup tomato juice
- 1 cup beer
- 2 cups chopped cabbage
- 1 teaspoon salt
- 1/2 teasoppn pepper

Step 1
In Dutch oven, cook bacon over medium heat; add onions, carrots, garlic and thyme to pot. Cook, stirring often, until onions are soft.
Peel and finely dice half the potatoes. Add to pot and cook, stirring occasionally, for 5 minutes. Pat beef dry; add to vegetable mixture. Stir in beef stock, tomato juice, beer, cabbage, salt and pepper; bring to a boil. Cover and reduce heart to low; simmer 1 1/2 hours, stirring occasionally.
Peel remaining potatoes and cut into bite-size pieces. Add to pot; cook, covered, for 15 minutes. Uncover and cook, stirring often, for 15 minutes or until meat is tender and sauce is slightly thickened. Adjust seasoning to taste.
