Ingredients
- 1 chicken, cut into serving pieces
- 2 tbs. butter, at room temperature
- 2 tbs. oil
- 2 tbs. lemon juice
- 1 tsp. salt
- 1 tsp. dried oregano leaves
- 1/4 tsp. pepper
- 4 medium potatoes, cut lengthwise into quarters

Step 1
Heat oven to 400 degrees, brush chicken with butter.
Combine the oil, juice, salt, oregano, and pepper in a small bowl with a fork. Brush chicken on all sides with the oil mixture.
Arrange pieces on a jelly-roll pan-pieces should not touch and bake 15 minutes; baste with pan juices and bake an additional 15 minutes. Turn chicken over and arrange potatoes with the chicken in the pan. Bke until the chicken and potatoes are golden and tender, 25-30 minutes more.
