Pumpkin Harvest Cookies Recipe

Ingredients
- 2 1/4 cups flour
- 1 tsp pumpkin pie spice
- 1/2 tsp baking soda
- 1 cup butter
- 1 1/2 cups dark brown sugar
- 1 cup pumpkin puree
- 2 eggs
- 1 Tbsp vanilla
- 10 oz white chocolate, chopped
- 1 cup pecan halves, toasted
Preparation
Step 1
1. Preheat the oven to 300 degrees.
2. In a small bowl, whisk together the flour, pumpkin pie spice, and baking soda.
3. In a medium bowl with an electric mixer, cream the butter and sugar. Beat in the pumpkin.
4. Beat in the eggs and vanilla. Beat in the flour mixture until just combined. Don't over mix.
5. Stir in the white chocolate and pecans.
6. Drop by rounded tablespoons 2 inches apart on an ungreased cookie sheet.
7. Bake 20-22 minutes or until just set.
8. Transfer to wire rack to cool.
