Ingredients
- 1 cup all-purpose flour
- 2/3 cup packed brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup applesauce
- 2 tablespoons vegetable oil
- 2 tablespoons water
- 1 1/2 teaspoons cider vinegar
- 1/3 cup chopped pecans, toasted
Preparation
Step 1
Stir together flour; brown sugar, cinnamon, baking soda, baking powder and salt.
Combine applesauce, oil, water and vinegar; bleend liquid ingredients into flour mixture. Stir in pecans.
Fill each mini cupcake cup with 2 tablespoons of batter. Bake in cupcake maker; about 5 to 7 minutes or until toothpick inserted in center comes out clean.
