Honey Spice Cake

This recipe came with my Nordic Ware Chrysanthemum bundt cake pan. Beautiful golden color when baked. It doesn't require any frosting or glaze although, as my friend Genny says, anything is better with a cream cheese frosting!

Ingredients

  • 1 cup hot water

  • 1 tsp instant coffee or instant espresso powder

  • 1 cup honey

  • 3/4 cup sugar

  • 1/2 cup vegetable oil

  • 4 eggs

  • 3 cups all purpose flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/2 tsp ground cloves

  • 1/2 tsp allspice

Directions

Heat oven to 325 degrees. Grease and flour bundt pan. Mix hot water with instant coffee; set aside. In a large bowl, mix honey, sugar, oil, and eggs until very light and fluffy. Add all remaining ingredients, including coffee mixture. Mix well. Spoon batter into prepared pan. Bake at 325 for 50-60 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes. Remove from pan; cool completely.
