No Such Thing As Too Much Chocolate Pie

- 1 1/4 cups chocolate chocolate chip cookie crumbs
- 1/4 cup butter, melted
- 2 1/2 cups heavy cream
- 2 cups semisweet chocolate chips
- 1/2 cup sugar
- 2 eggs
- 3 t. vanilla
- 1/4 t. salt

Step 1
In medium bowl combine 1 cup cookie crumbs and melted butter. Press into a 9 inch square pan. Refrigerate until ready to use. In small saucepan heat 1 1/2 cups cream just to boiling. In blender combine chocolate chips, 1/4 cup sugar, eggs, 2 tsp. vanilla and salt. Add hot cream and process until smooth, about 1 minute. Pour into prepared pan. Refrigerate at least 1 hour. In mixer bowl combine remaining 1 cup cream, remaining 1/4 cup sugar and 1 tsp. vanilla. Beat until stiff peaks form. Spread over chocolate mixture and sprinkle with reserved cookie pieces.
