Ingredients

  • 1 pound red kidney beans
  • 1 qt. water
  • 1 ham bone
  • 1 large onion, chopped
  • 1/4 cup chopped celery
  • 1 tsp. salt
  • 1/2 tsp. tabasco (louisianna brand I use)
  • 3 cups cooked rice

Preparation

Step 1

Soak bean overnight in water. Pour into large heavy pan or dutch oven. Add all ingredients except rice (will be combined at end of cooking). Simmer 3 hours or until beans are tender. Remove ham bone, cut off meat and return to beans. Add water when necessary while cooking (water should barely cover top of beans by the end of the cook). Remove one cup o beans and mash to a paste and return to beans stiring until liquid is thickened. Serve over hot rice.
