Ingredients

  • Cookies:

  • 1 1/2 C. Flour

  • 1/2 C. Ground Almonds

  • 1/2 tsp. Baking Powder

  • 1/4 tsp. Salt

  • 1/2 tsp. Ground Cinnamon

  • 3/4 C. butter softened

  • 3/4 C. sugar

  • 2 Egg Yolks

  • 1 tsp. vanilla extract

  • 1 tsp. almond extract

  • Filling:

  • 1/2 C. Raspberry Jam

  • 1 tsp. Grated Lemon Peel

Directions

1. Pre-heat oven to 300 2. In Med. Bowl combine flour, almonds, baking powder, salt and cinnamon with whisk. 3. In Lg. bowl with electric mixer cream butter and sugar. Add egg yolks, vanilla and almond extracts and beat until light and fluffy. 4. Add flour mixture and blend at low speed until just combined. DONT OVERMIX. 5.Roll dough into 1 in. balls. Place 2 in. apart on ungreased baking sheet. With index finger press an indentation in center of each ball to hold filling. 6. Bake 22-24 min. 7. In sm. bowl combine jam and peel. Place into center of cookie.
