Ingredients
- 1 Package Ground Turkey
- 1 Cup Chopped Carrots
- 1 Onion
- 2 Cloves Garlic
- 1 Tbsp Olive Oil
- 2 Cups Corn
- 2 Cups Brown Rice
- 2 Cups Crushed Tomatoes or Tomato Sauce
- 2 Cups Fat Free Chicken Broth
- 3 Cups Chopped Red/Green/Orange Peppers
- 1 Packet of McCormicks Chile Mix
- 1 tbsp Red Pepper Flakes
- 1 Tbsp Salt
- 1 Tbsp Pepper
- 1 Cup Graded Cheddar Cheese (optional)
- 1 Cup Sour Cream (optional)

Step 1
1.) In a large pot heat 1 tbsp olive oil and sautee the sliced onion and crushed garlic. When onion and garlic are sauteed add the turkey to brown.
2.) Once turkey is browned add the chile powder mix, crushed tomatoes, salt, pepper, red pepper flakes, chopped carrotts and chicken broth. Simmer for 20 minutes.
3.) After 20 minutes add chopped peppers, corn, and brown rice. Cook for an additional 20 minutes.
*You can serve with sour cream on top as well as grated cheddar cheese.
