Sweet Potato Casserole

Ingredients
- Casserole:
- 2 large cans of sweet potatoes, drained
- 1 1/2 cups sugar
- 2 TBS butter or margarine
- 2 eggs
- pinch of salt
- 1 tsp of vanilla
- 1 small can of evapoarted milk (save some for topping)
- Topping:
- 1 cip of brown sugar
- 1/2 stick of butter or margarine
- 1 cup crushed Cornflakes or Total
- 1/2 cup chopped pecans (optional)
- evaporated milk ffrom above
Preparation
Step 1
Drain the 2 large cans of sweet potatoes. mash the potatoes. Add the sugar, butter, eggs, salt, vanilla, and evaporated milk and mix together well. Place in a round casserole dish and bake at 375 degrees for 20 minutes.
Mix the topping together and add to the top of the casserole after 20 minutes. Put back in the oven and bake for another 10 to 15 minutes.
