Ingredients
- 12 Idaho potatoes diced into one inch cubes
- 1 medium onion chopped fine
- 2 ribs of celery finely chopped
- 2 tbp of red wine vinegar
- 1 - 1 1/2 tsp black pepper
- 1 tbp of Olive Oil
- 1/2 teaspoon of salt and more for boiling water
- 1 tsp butter
- 1 - 1 1/2 cups mayonnaise to taste
- Parsley
- Pot of boiling water.

Preparation
Step 1
Place pot of water with some salt to boil. When you have a rolling boil, add potatoes, boil for 10 minutes or so. Until potatoes are firm but tender. Place cold water over potatoes and drain quickly. Put aside.
While potatoes cool, wash and chop celery and onions very small. Add mayonnaise, vinegar, salt, pepper, butter, olive oil and mix well.
Add warm potatoes to mayo mix and mix carefully not to break potatoes. Add parsley and enjoy!
