Ingredients

  • 4 tsps canola oil, divided
  • 1 18-oz. tube polenta
  • ¾ tsp. salt, divided
  • ½ C. fresh cilantro leaves
  • ½ tsp. ground cumin
  • ½ C. crumbled feta cheese
  • ½ tsp. chipotle chile powder
  • ½ C. fresh salsa
  • ¼ tsp. freshly ground pepper
  • 1 lb flank steak or flat-iron steak

Step 1

Combine 1 tsp. oil, ½ tsp. salt, cumin, chile powder, and pepper. Rub over steak. Grill steak 6 min. on each side. Remove. Let stand 5 min. Cut steak diagonally across grain into thin slices. While steak rests, brush remaining 1 T. oil over both sides of polenta slices; sprinkle evenly with remaining ¼ tsp. salt. Add polenta to grill for 3 min. on each side or until browned. Arrange 2 slices of polenta on plate. Top with steak, cilantro leaves, feta cheese, and salsa. Serve with lime wedges if desired. Yields 4 servings
