Wolfy's Holiday Strudel Bites

Ingredients
- Strudel Ingredients:
- 1/2 pound butter, at room temperature
- 1 cup sour cream
- 2 cups all-purpose flour
- Strudel Filling No 1:
- 1 cup apricot-pineapple jam
- 1 cup golden seedless raisins
- 1 cup chopped walnuts
- Strudel Filling No 2:
- 1 cup chopped apples cooked in small amount of water until tender, drain and cool
- 3/4 cup apricot-pineapple jam
- 3/4 cup chopped walnuts
- 1/2 cup raisins
Preparation
Step 1
Blend butter and sour cream; mix in flour to make a dough. Separate into 4 balls of equal size and wrap in waxed paper. (Coating hands with small amount of flour helps to handle the dough at this stage). Refrigerate dough balls at lease one hour.
While dough is chilling, mix whichever strudel filling you've chosen and set aside. Refrigerate if it is not going to be used immediately.
Roll each ball of pastry into a rectangle, approximately 1/4-inch thick, between two sheets of waxed paper. Remove top sheet waxed paper; spread dough with filling. Roll up in jelly-roll fashion and place on ungreased baking sheet. Bake at 350 F for 35 to 40 minutes. Rolls are done when the sides are crisp to the touch. Cool, sprinkle with powdered sugar, slice and serve.
