Ingredients

  • SALAD
  • 2 cups blueberries
  • 1 kiwi,peeled and sliced
  • 2 cups red grapes
  • 1 pint strawberries sliced
  • 1 apple cored,peeled and sliced
  • 2 cups shredded Chinese or Nappa cabbage
  • 2 medium fennel bulbs,trimmed and very thinly sliced
  • DRESSING
  • 2 cups fresh or frozen blueberries
  • 1 //2 cup pomegranate juice
  • 1/4 cup raw cashews
  • 1/4 cup raw sunflower seeds
  • 3 Tbs fruit flavored vinegar
  • 4 dates,pitted
  • 1/2 tsp vanilla extract

Preparation

Step 1

Combine salad ingredients in a large bowl. Blend all dressing ingredients in a blender until smooth and creamy. Toss salad with desired amount of dressing.
