Strawberry Rhubarb Cobbler

Ingredients

  • 1 quart strawberries, halved, top removed
  • 4 cups chopped rhubarb (1/2 inch pieces)
  • 2/3 cup white sugar
  • 4 tablespoons VANILLA SUGAR, Divided
  • Topping
  • 1 3/4 Cups flour
  • 1/2 cup sugar
  • 1 Tablespoon baking powder
  • 1 pinch salt
  • 6 Tablespoons (3/4 stick) butter, cold
  • 3/4 cup milk

Preparation

Step 1

1. Preheat oven to 350. Place strawberries, rhubarb, white sugar and 3 TB. VANILLA SUGAR in a bowl, toss gently and set asaide.


2. Topping - Mix flour 1/2 c. sugar, baking powder and salt in a bowl and stir to blend. Cut the butter into small pieces, add to flour mix and blend with fingers until mixture resenbles coarse crumbs. Add the milk and stir just to blend.

3. Butter a 9 x 13 baking pan (prefer glass), place the fruit in the pan and spoon topping over fruit. Spread with spoon as best as you can, don't worry if it doesn't reach edges. Sprinkle the crust with remaining tablespoon of VANILLA SUGAR. Bake for 40 to 50 min, until crust is golden brown. Cool before cutting and serving.
