Ingredients

  • 1 1/2 cups dried apricots (1 pkg.)
  • 1 1/2 cups water
  • 1/4 cup honey
  • 1 1/3 cups firmly packed brown sugar
  • 1 cup butter, softened
  • 1 1/2 cups rolled oats
  • 1 1/2 cups flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup chopped pecans

Step 1

Combine apricots and water in a medium saucepan. Simmer, uncovered, over medium heat for 15 minutes, drain, let cool and then chop. Stir honey into chopped apricots. In a separate bowl, beat brown sugar and butter until fluffy. Add oats, flour, baking soda, and salt. Beat until well mixed. Stir in pecans. Measure 2 cups of the oat mixture and reserve for topping. Press remaining oats mixture in bottom of an ungreased 13x9x2 inch baking pan. Bake in a preheated 375º degree oven for 10 minutes, or until crust is lightly browned. Spread apricot filling evenly over crust to within 1/2 inch of sides. Sprinkle reserved oat mixture over filling. Return to 375 degree oven and bake for 25 minutes, or until golden. let cool in pan, cut into squares and dust with confectioners’ sugar if desired.
