Ingredients
- 1 tbsp olive oil
- 1 large onion, chopped
- 2 tbsp dried thyme
- 1 to 2 tsp black pepper
- 10 garlic cloves, minced
- 2 lbs red potatoes cubed
- 1 can cut green beans, drained
- 1/4 cup water
- 2 tbsp finely chopped olives
- 2 cans diced tomatoes with liquid
- 8 skinned, boned chicken thighs
- 1/2 cup crumbled feta cheese

Preparation
Step 1
1. preheat oven to 375. heat olive oil in large dutch oven over medium heat
2. add chopped onion and saute 3 min, then add thyme, pepper and garlic. saute 1 minute. increase heat to medium high
3. add red potatoes; saute for 8 minutes or until potatoes begin to brown
4. stir in green beans, water, chopped olives, and diced tomatoes. remove tomato mixture from heat and nestle chicken thighs in it
5. cover with feta cheese and bake 45 minutes. top with extra cheese before serving
