Linguine and White Clam Sauce

Ingredients

  • 3 TBSP Olive Oil (dad says to add a LOT more)
  • 3TBSP butter
  • 1 small onion
  • 4 LG cloves garlic
  • 1 pinch chili flakes
  • 1/2 tsp oregano
  • 1 tsp basil
  • 1 tsp parsley
  • 2 TBSP flour
  • 1/2 dry white wine
  • 15 oz clams
  • 1 lb linguine
  • Parmesan cheese

Preparation

Step 1

Melt butter and oil together in saute pan.
Add onion, garlic, flakes, oregano, basil, and parsley. (if using fresh herbs, add with clams)
over low heat, cover pan and let simmer until onions and garlic are tender. So not let them get brown.
Drain clams and set aside juice.
Whisk in the 2 TBSP flour then clam juice,then wine. Turn heat to medium low and simmer for 8 minutes.
Cook pasta
Add clams to sauce and heat until it returns to simmer.
Pour over bowls of pasta.
